Cake: 

Vegetable oil spray, for misting the pan
Flour for dusting the pan
1 package (18.25 ounces) lemon cake mix
1 package (5.1 ounces) lemon instant pudding mix
3/4 cup of Danny Devito Limoncello
1/2 cup of vegetable oil, such as canola, corn, safflower, soybean, or sunflower
1/2 cup of lemonade or freshly squeezed lemon juice
4 large eggs
1/2 teaspoon pure lemon extract

Glaze: 

1 cup confectioners’ sugar, sifted
4 tablespoons lemonade or freshly squeezed lemon juice
2 tablespoons of Danny Devito Limoncello

  1. Place a rack in the center of the oven and preheat the oven to 350 F.  Lightly mist a 12-cup Bundt pan with vegetable oil spray, then dust with flour. Shake out the excess flour.  Set the pan aside.
  2. Place the cake mix, pudding mix, limoncello, oil, lemonade, eggs, and lemon extract in a large bowl.  Blend with an electric mixer on low speed for 1 minute.  Stop the machine and scrape down the sides of the bowl with a rubber spatula.  Increase the mixer speed to medium and beat for 2 minutes more, scraping the sides down again if needed.  The batter should look thick and smooth.  Pour the batter into the prepared pan, smoothing it out with the rubber spatula.  Place the pan in the oven.
  3. Bake the cake until it is golden brown and springs back when lightly pressed with your finger, 45 to 50 minutes. Remove the pan from the oven and place it on a wire rack to cool for 20 minutes.  Run a long, sharp knife around the edge of the cake and invert it onto a serving platter or cake stand.
  4. Prepare the glaze.  Place the sugar, lemonade, and limoncello in a small mixing bowl.  Stir until well combined.
  5. Poke holes in the top of the cake with a wooden skewer or toothpick. Spoon the glaze over the warm cake, allowing it to seep into the holes and drizzle down the sides and into the center of the cake.  Allow the cake to cool completely before slicing.  Cover with cake dome or plastic wrap until ready to serve.

The great thing about this cake is that you can make it a day or two earlier than you need it.  The longer it sits, the better it gets!  But once you serve it, it goes really fast!!!!!
